πŸŽƒ 4 pumpkin recipes to bake this weekend

Classic Family Recipes for Everyday Life

Hi Reader,

It's officially pumpkin spice season, so this week I pulled together four recipes that cover the whole day: a quick bread for breakfast, a cornbread for supper, and two easy desserts. If you have a can of pumpkin and some warm spices in the pantry, you're most of the way there.

A moist, dense quick bread with cinnamon, nutmeg, and a good crunch from chopped walnuts. There's no rising time, and a warm slice with a little butter is hard to beat with your morning coffee.

Tip: For even more pumpkin spice flavor, swap the cinnamon and nutmeg for 1 Β½ teaspoons of pumpkin pie spice.

Slightly sweet from maple syrup and brown sugar, with a moist center and a golden, crunchy crust. No mixer needed, and it bakes in about 25 minutes, so it's easy to add alongside a pot of chili or stew.

Tip: Light brown sugar works just fine if that's what you have on hand.

This one comes from my grandma's recipe box. A buttery cake mix crust gets topped with a creamy pumpkin and cream cheese layer that stays soft and gooey in the center. And it's even better the next day.

Tip: Sift the powdered sugar and make sure your cream cheese is fully softened for the smoothest filling.

This recipe is also in my grandma's handwriting, and it's an easy twist on pumpkin pie. A chewy oat crust, a creamy spiced pumpkin layer, and a brown sugar pecan topping all bake in one 13x9 pan, so it's easy to take to a potluck or fall get-together.

Tip: Press the crumbly crust mixture firmly into the pan so it holds together under the filling.

Diane shared: "I made this recipe yesterday for a final community dinner for our community garden and got rave reviews. Passed along the recipe to other gardeners looking for ways to use their zucchini. It was delicious!"

I'd love to hear which one you make first. Just hit reply and let me know!

Classic Family Recipes for Everyday Life Hi Reader, I found this buttermilk pancakes recipe tucked inside a cookbook that's over 50 years old and after retesting it in my own kitchen, I can tell you it was worth the dig. One batch makes a generous 17 pancakes, tall and fluffy every time. Buttermilk Pancakes Tip: Don't overmix the batter. A few lumps are actually what gives you that light, fluffy rise. Classic Family Recipes for Everyday Life Hi Reader, Fall officially starts next Tuesday, though my kitchen already switched over to soup and casserole mode a while ago. If your weeknights feel like a sprint between pickup, practice, and dinner, these seven meals are built for exactly that kind of chaos. Minimal chopping, mostly hands-off, and every one of them tastes like you spent way more time on it than you actually did. Chili Recipe A simple, no-fuss chili you can start after work and...

Classic Family Recipes for Everyday Life Hi Reader, So I have to tell you about this dinner I've been making on repeat: Taco Spaghetti. Taco night and spaghetti night cook together in one skillet, noodles and all, so there's just one pan to wash when dinner's done. It was a big hit with my kids, and the inspiration came from my easy sausage pasta, a recipe I make a lot for busy weeknights. I swapped in ground sausage here too. It's cheaper by the pound and brings a lot more flavor, no extra...
